I looked online for a recipe with Pumpkin Honey Mustard as an ingredient to get my inspiration, but I didn’t find any that matched what I had in mind. So, I created my own chicken recipe inspired by several recipes that called for honey mustard. I was very impressed with the final result because I was not expecting the big yet balanced tastes of both the sweet and the savory. The chicken was tender, and sweet from the Pumpkin Honey Mustard and the shallots.

- Pre-heat oven at 370 F, Put chicken thighs in a baking dish and add salt & pepper.
- In a frying pan on medium heat, sear the chicken on both sides, (around 2 minutes per side) until you get a nice brown color. Then, put the chicken back into the baking dish.
- In a mixing bowl, add the lemon juice, olive oil, thyme, shallots and the Pumpkin Honey Mustard. Mix well. Pour the mixture over the chicken and bake for 35 minutes.
