Description
This Baked Chicken Thighs with Pumpkin Honey Mustard is one of my “Easy 1-2-3 Recipes” that I recommend for any occasion. It was done in under 45 minutes, has only 7 ingredients, and most of those ingredients should be in your pantry already.
Ingredients
- 4 chicken thighs without skin and bone in.
- Juice from half of a lemon
- 2 TableSpoons Extra Virgin Olive Oil Click to purchase in our online shop
- Salt & Pepper
- 2 teaSpoons dry thyme
- 2 TableSpoons of Pumpkin Honey Mustard Click to purchase in our online shop
- 2 sliced shallots
Instructions
- Pre-heat oven at 370 F, Put chicken thighs in a baking dish and add salt & pepper.
- In a frying pan on medium heat, sear the chicken on both sides, (around 2 minutes per side) until you get a nice brown color. Then, put the chicken back into the baking dish.
- In a mixing bowl, add the lemon juice, olive oil, thyme, shallots and the Pumpkin Honey Mustard. Mix well. Pour the mixture over the chicken and bake for 35 minutes.
