Description

Pear & Blue Cheese Ice Cream has a unique, complex, and unusual flavor combination that will knock your taste buds for a loop after every spoonful. Our ice cream base is mix of blue cheese, pear preserves, dried apricots and honey, creating a delightful and pleasant experience in your mouth.

  1. Put the chilled eggless ice cream base into an ice cream maker and turn on the machine. Churn just until the mixture has the texture of soft serve (20-30 mins).
  2. Remove the middle piece of the ice cream maker and quickly add the blue cheese crumble and combine.
  3. Stir the pear preserves with a fork to loosen it. Using a freezer-friendly container, quickly alternate spooning layers of the mixture and generous dollops of the pear jam.
  4. Cover with parchment paper, pressing it to the surface of the ice cream so it adheres, then cover with a lid. It’s okay if the parchment hangs over the rim. Store it in the coldest part of your freezer (farthest from the door) until firm, at least 6 hours. It will keep for up to 3 months.

Notes

You have the option to add the blue cheese in step #1, but the cheese will melt and will soften the strength of the flavor of the blue cheese.

Let the ice cream base “age” in the refrigerator overnight. This process will give the proteins in the milk time to relax. As a result, your ice cream will have a smoother texture and a more robust milky flavor.

The base can be stored in the fridge for up to 1 week or in the freezer for up to 3 months. (Just be sure to fully thaw the frozen base before using it.)
