Description

Stuffed Pork Chops with Fig Marmalade Glaze is an excellent dish to make, when you invite people over for dinner or for any day if you feel craving for a delicious, sweet, crunchy pork chops. But, don't forget the glaze made with our Organic Navarino Icons Fig Marmalade.

Ingredients

  • 2 pork chops - about 1 inch thick
  • 1/4 cup chopped dried apricots
  • 1/4 cup goat cheese
  • 1/4 cup chopped toasted pecans
  • 1/4 cup white wine
  • 1/2 cup Navarino Icons Fig Marmalade, divided
  • pinch cayenne pepper (optional) and salt

Instructions

  1. Preheat oven to 350
  2. Mix apricots, goat cheese, pecans, cayenne, and salt in a bowl
  3. Cut a pocket into pork chops. With a sharp knife, make a 1-inch horizontal incision along the side of each chop and cut a deep, wide pocket in the chop
  4. Stuff pork chops with mixture and secure with a toothpick
  5. Season chops with salt and pepper and place in a small baking dish
  6. Spread 1/4 cup of the fig marmalade over pork chops, reserving 1/4 cup for later
  7. Pour wine into dish a place in oven. Cook for 25 minutes, or until pork reaches desired temperature
  8. Remove chops and let rest 5 minutes before serving
  9. Remove toothpicks and pour remaining fig marmalade on top
