Artichoke Parmesan Bites is one of our "Easy 1-2-3" recipes. The crunchy phyllo shell holds the tasty Artichoke Pesto by L’Epicurien. This recipe is very versatile and you can do many variations like adding pieces of shrimp or crab. Also, you can chop some green olives and mix with the tapenade.

- 1 jar Artichoke Pesto
- 1/2 cup shaved Parmesan
- 2 packs Mini Phyllo (Fillo) Shells (15 count each package)
- Pour into each shell a 1/2 Tablespoon of the Artichoke Pesto. If you feel that needs more, add more if you wish.
- Sprinkle each fillo shell with 1 teaspoon shaved Parmesan cheese.
- Bake for 7 minutes or until the cheese melts a little bit. Serve immediately.
